Physics of espresso

Jonathan Gagné is a researcher in astrophysics at the Rio Tinto Alcan Planetarium in Montreal and adjunct professor at Université de Montréal. His research focuses on young stars and exoplanets .

Jonathan took up trying to better understand the physics of coffee brewing in his free time, and began relating his findings on his blog Coffee Ad Astra. The blog posts and research led to writing the book The Physics of Filter Coffee. Jonathan has since taken up experimenting with espresso.

 Jonathan will present on June 29 his latest findings on the physics of espresso and how they affect various practical aspects of espresso preparation. He will also touch on how the properties of grinders and water affect espresso. Coffee enthusiasts of any level are welcome, and no scientific background is required.
