Colombia El Mirador is our excellent single origin coffee, characterized by an inviting aroma of ripe plums that delights the senses with its slightly acidic sweetness. The first sip reveals a juicy and satisfying taste, with persistent notes of sun-ripened fruit.

The result of the Dark Room Natural processes is a range of coffees that exhibit unparalleled cleanliness and complexity of flavour, offering a distinctive sensory profile compared to traditional natural coffees or other drying methods.

Where’s it from

El Mirador Farm, nestled in the beautiful region of Huila, Colombia, is renowned for its exceptional coffee production. Situated in the municipality of Palestine, this farm stands out for its meticulous cultivation practices and dedication to quality. With a rich assortment of varieties including Caturra, Tabi, Catuai, Orange Bourbon, Striped Bourbon, and Geisha, El Mirador Farm boasts over 18 years of experimentation and refinement in coffee production. The farm operates on two harvest cycles: the Mitaca harvest from May to July and the main harvest from September to December. One of the farm's notable processes is the Dark Room Natural, designed to optimize drying conditions. Incorporating dehumidifying equipment and fans, this method ensures a controlled environment, allowing for continuous drying day and night. With a focus on short fermentation periods of 36 to 48 hours, the coffees undergo a thorough disinfection process before drying, ensuring the expression of terroir and variety genetics.
