This processing enhances the brightness and cleanliness in the cup, highlighting a refined and complex aromatic profile. On the palate, the coffee offers a lively lime acidity, followed by the juicy sweetness of blackberry and a delicate aftertaste of honey, which provides balance and persistence.

Where’s it from

In the Santa María de Dota Valley (Tarrazú, Costa Rica), Finca Cedral is one of Roger and Alex Ureña's ten farms. All their coffees are processed at their Santa Teresa mill using the honey method, which retains part of the fruit’s mucilage on the beans. Instead of traditional washing, Roger uses a mechanical demucilager to control the mucilage left on the parchment, influencing the honey process color—ranging from white to black. As the mucilage ferments, it forms a sticky, honey-like layer that enhances sweetness and complexity.
