The process uses the most advanced drying technology on the market, developed by the combination of zeolite, a mineral with high absorption, catalysis and water retention capacity, and a vacuum environment. Diego is able to dry coffee cherries in less than 10 hours after harvesting, without the use of heat, thus preserving their structure, color and natural flavor in an unprecedented way, in order to create a sensorial experience unique.
